Cambray Sheep Cheese is a family owned and operated business. We opened in April 2005 and have already had success; with our cheeses winning two Golds, a First Place and two silvers, at the 2005 Dairy Industry Association of Western Australia. We also won silver and a first place in the 2005 Perth Royal Show. Our Cheeses are hand made to
traditional, mainly French, recipes They are cured in temperature and humidity controlled curing rooms; some for months, where they require constant attention with daily
turning. Frequent hand washing of some
cheeses gives them a very mellow flavour. Others are coated and some are left
to form a natural rind. The way the Cheeses are cured gives them their unique flavour. Health benefits include extra calcium - which is very easily digested and a different protein structure so anyone allergic to cow milk
products can usually tolerate Sheeps cheese. The fats in sheep cheese are mainly the good fats so if you
have a cholesterol problem small helpings of sheeps cheese are okay for a
treat.
