Must Margaret River opened in January 2009, the sassy younger sister of Russell Blaikie's Perth institution Must Winebar in Highgate. Must Margaret River is a bistro, lounge and bar as well as offering four accommodation suites.

Open from 4pm until late seven days a week. Drop in for an impromptu glass of wine, a snack at the bar, or a meal in the bistro. Or just arrive and let us help you with the tough decisions.

The kitchen team make the most of local produce and have a purpose built meat aging cellar. You can sneak a peak into the kitchen through the cellar where cuts of beef hang until they are drawn down and portioned for service. While Must is wonderful for meat lovers, the ocean and the earth are also great providers. Our local suppliers are integral to helping us maintain our standards and its their dedication to organic or at the least, clean and green practices that we are grateful for.

Must Margaret River lists the A to Z of all wine producers in the region, a top 50 from the region and a further 500 wines from around the country and the rest of the world. In keeping with the Must ethic, many wines are poured by the glass and sommeliers are on hand to assist you with your choice. The list is thoughfully devised and includes rare, unusual and prestigious wines.

The Bar also boasts every spirit you would hope to find in a distinguished bar, including Sherries, Brandies, Armagnac, Absinthe, Vodkas, Rums and Tequilas, international beers and a crafty little cocktail list.
